Cherry & Apricot Cookies


We love a good cookie and they're one of my specialties! It's been a while since I've made a batch so I decided on a new recipe and this is the outcome.

Yummy cherry and apricot cookies! Do you want to give them a try too? 

You will need.......
  • 100g chopped apricots
  • 100g glace cherries
  • 125g butter/baking spread
  • 100g light brown sugar
  • 125g caster sugar
  • 1 egg
  • 1 teaspoon of vanilla essence
  • 225g self raising flour
  • 1/2 teaspoon of salt
  • Mixer or wooden spoon
  • Mixing bowl
  • Knife or slice
  • Sieve
  • Baking tray
  • Greaseproof paper
  • Cooling rack

Preparation time - 10 minutes. 
Baking time - 7 minutes per batch.

Preheat the oven to 180c and line a tray with greaseproof paper. Mix the sugar and butter or spread until creamed together.

Add the egg and vanilla and mix well.

Sift in the flour and salt, mix, and then add the apricots and cherries and mix again.

Use your hands to make the dough into small balls and lay them out on the baking tray.

Bake for 7 minutes for a soft cookie or 10 minutes for a harder biscuit. Use the knife or slice to transfer the cookies to a wire tray to cool.
